Ingredients:
- 2 cups of oats (blended into a flour consistency)
- 1/2 cup whole wheat flour
- 3/4 cup pure pumpkin puree
- 2 eggs
- 1/2 cup honey
- 2 tbsp pure maple syrup (this gives it a little extra sweetness and a great maple kick)
- 1 banana, mashed
- 1/2 cup unsweetened applesauce
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1 tsp vanilla
- 1 tsp salt
Directions:
- Preheat oven to 375 degrees
- Mix all ingredients
- Pour batter into a greased loaf pan
- Bake approximately 40 minutes or until firm, and toothpick comes out clean.
- Let cool, slice, and serve!
